Tuna
Sandwiches

Serves 4
Ingredients:
-
1 x 180g
tinned tuna (in brine or olive oil)
-
3-4
tablespoons mayonnaise.

8 slices
of bread.

Butter
(at room temperature).
-
Salt &
pepper to taste.
Method:
-
Drain tuna &
fork into a bowl. Break up any larger
flakes.

1 teaspoon
lemon juice.
-
Add
mayonnaise, lemon juice, salt & pepper to taste.
-
Butter 8
slices of bread.
-
Spread tuna
mixture on one side of bread, cover with
other slice & cut in half.
Optional extras:
-
Tuna sandwiches
can also be served with salad. Add lettuce,
tomato, cucumber.

Finely chop
1/4 of a purple onion & add to the
tuna/mayonnaise mixture.
-
Add a small
amount of finely chopped celery mixed in
with the tuna.
-
Add a
tablespoon or two of tinned corn to the tuna
mix.
