Tuna Sandwiches

Tuna sandwich

Serves 4

Ingredients:

  • 1 x 180g tinned tuna (in brine or olive oil)

  • 3-4 tablespoons mayonnaise.

  • 8 slices of bread.

  • Butter (at room temperature).

  • Salt & pepper to taste.

Method:

  • Drain tuna & fork into a bowl. Break up any larger flakes.

  • 1 teaspoon lemon juice.

  • Add mayonnaise, lemon juice, salt & pepper to taste.

  • Butter 8 slices of bread.

  • Spread tuna mixture on one side of bread, cover with other slice & cut in half.

Optional extras:

  • Tuna sandwiches can also be served with salad. Add lettuce, tomato, cucumber.

  • Finely chop 1/4 of a purple onion & add to the tuna/mayonnaise mixture.

  • Add a small amount of finely chopped celery mixed in with the tuna.

  • Add a tablespoon or two of tinned corn to the tuna mix.
