Tomato Soup

tomato soupIngredients:

1kg tomatoes.
1 tablespoon oil.
1 onion, chopped.
2 cloves of garlic, crushed.
1 tablespoon tomato paste.
4 cups of chicken stock.
1/2 teaspoon sugar.
Salt & pepper to taste.

Method:

  • Cut a small cross in the base of each tomato. Place tomatoes in a pan of boiling water for 1-2 minutes, then plunge into cold water.

  • Peel the skin off each tomato & chop the flesh.

  • Heat oil in a medium pan, add the onion & garlic. Cook for 5 minutes until the onion is translucent.

  • Add tomato & tomato paste. Simmer covered for 10 minutes.

  • Add stock, sugar, salt & pepper. Simmer covered for a further 5-10 minutes then cool.

  • Blend in a food processor in batches until the mixture is smooth. Return soup to pan & heat through.

  • Serve with crusty bread.
