Tofu Curry
Ingredients:
- 1 onion,
finely chopped.
- 1 bulb of
garlic, finely chopped.
- 1 large
green pepper (capsicum), chopped into
chunks.
- 1 large
red pepper (capsicum), chopped into chunks.
- 1
tablespoon fresh ginger, finely chopped.
- 1 pack
(250g) tofu, chopped.
- 2 large
onions, chopped into chunks.
- 1/2 jar of
Balti (tomato & coriander) curry paste.
- 1 x 375g
tin of tomatoes.
- 100mls
water.
- Salt (to
taste)
- 1
tablespoon sugar.
- 3/4 cup of
frozen peas.
Method:

Add a small amount of oil to
a large pan & add the chopped onion, cook
over a medium heat.

While the onion is cooking,
chop the garlic & add to the pan with the
onion.

Chop up green pepper
(capsicum) into chunks, removing the
insides, add to pan.

Chop up red pepper
(capsicum) into chunks, removing the
insides, add to pan.

Peel & finely chop fresh
ginger, add to pan, mix together all
ingredients.

Mix all ingredients well.

Chop up tofu into bite sized
chunks & add to pan.

Peel & chop up mushrooms,
add to pan & stir in well.

Add Balti curry paste & stir
in well so that all of the vegetables are
coated. Cook for 5 minutes.

Add tinned tomatoes, break
up (if whole), and stir in well

Add water.
-
Add salt (to taste) & sugar.
Stir in well.

Add peas, & stir in well.
-
Simmer for 20 minutes over a
low heat.
