Tofu Curry

Ingredients:

  • 1 onion, finely chopped.
  • 1 bulb of garlic, finely chopped.
  • 1 large green pepper (capsicum), chopped into chunks.
  • 1 large red pepper (capsicum), chopped into chunks.
  • 1 tablespoon fresh ginger, finely chopped.
  • 1 pack (250g) tofu, chopped.
  • 2 large onions, chopped into chunks.
  • 1/2 jar of Balti (tomato & coriander) curry paste.
  • 1 x 375g tin of tomatoes.
  • 100mls water.
  • Salt (to taste)
  • 1 tablespoon sugar.
  • 3/4 cup of frozen peas.

Method:

  • Add a small amount of oil to a large pan & add the chopped onion, cook over a medium heat.

  • While the onion is cooking, chop the garlic & add to the pan with the onion.

  • Chop up green pepper (capsicum) into chunks, removing the insides, add to pan.

  • Chop up red pepper (capsicum) into chunks, removing the insides, add to pan.

  • Peel & finely chop fresh ginger, add to pan, mix together all ingredients.

  • Mix all ingredients well.

  • Chop up tofu into bite sized chunks & add to pan.

  • Peel & chop up mushrooms, add to pan & stir in well.

  • Add Balti curry paste & stir in well so that all of the vegetables are coated. Cook for 5 minutes.

  • Add tinned tomatoes, break up (if whole), and stir in well

  • Add water.

  • Add salt (to taste) & sugar. Stir in well.

  • Add peas, & stir in well.

  • Simmer for 20 minutes over a low heat.
