Stilton Soup
Ingredients:
- 30g
butter
- 1 onion,
finely chopped
- 1kg
potatoes, peeled & cut into chunks
- 1 litre
chicken stock
- 1/2 cup
of cream
- 125g
Stilton cheese
- Salt &
pepper to taste
Method:
- Melt the
butter over a medium heat in a large pan,
add the onion & cook until soft & golden.
- Add the
potato & chicken stock & bring to the boil.
Simmer, covered for 15 minutes until the
potatoes are tender.
- Transfer
the mixture in batches into a blender &
blend until smooth.
- Return to
saucepan, add cream & cheese. Stir
continually until melted.
- Season
with salt & pepper.
- Serve
with crusty bread.
