Stilton Soup 

Ingredients:

  • 30g butter
  • 1 onion, finely chopped
  • 1kg potatoes, peeled & cut into chunks
  • 1 litre chicken stock
  • 1/2 cup of cream
  • 125g Stilton cheese
  • Salt & pepper to taste

Method:

  • Melt the butter over a medium heat in a large pan, add the onion & cook until soft & golden.
  • Add the potato & chicken stock & bring to the boil. Simmer, covered for 15 minutes until the potatoes are tender.
  • Transfer the mixture in batches into a blender & blend until smooth.
  • Return to saucepan, add cream & cheese. Stir continually until melted.
  • Season with salt & pepper.
  • Serve with crusty bread.
