Spaghetti Carbonara

spaghetti carbonara

Ingredients:

2 cloves of garlic, peeled and finely chopped
1 white or yellow onion, peeled & chopped
10 slices of pancetta or bacon, cut into 1cm strips
4 eggs
1 cup of freshly grated parmesan cheese, plus extra to serve
100ml thickened cream
Spaghetti or fettucini
Salt & freshly ground black pepper

Method:

  • Bring a pan of salted water to the boil. Add the pasta and cook until al dente. Drain pasta and return to pan.

  • Meanwhile, in a frying pan add a splash of oil and fry the pancetta/bacon, onion & garlic.

  • Add the eggs, parmesan cheese, cream and salt & pepper to a bowl and mix. Add to the cooked pasta and mix in well. Note, the pasta mix should be just out of the pan & still hot as it is this that cooks the eggs.

  • Add the bacon/onion mix to the pasta mix.

  • Top with parmesan cheese.
