Shortbread

Ingredients:

  • 250g butter (at room temperature)

  • 100g (1/2 cup) of caster sugar

  • 90g (1/2 cup) of rice flour, sifted

  • 300g (2 cups) of plain flour, sifted

Method:

  • Preheat oven to 150˚C.
  • Sieve rice flour & plain flour into a bowl.
  • Add the sugar.
  • Rub in the butter.
  • Using your hands, mix into a dough.
  • Roll out onto a lightly floured (or sugared) bench top.
  • Cut into desired shapes.
  • Place onto a baking tray which is lined with baking paper.
  • Prick all over with a fork & sprinkle with sugar.
  • Bake for approximately 20 minutes.
