Shortbread

Ingredients:

250g butter
(at room temperature)
-
100g (1/2 cup)
of caster sugar
-
90g (1/2 cup)
of rice flour, sifted
-
300g (2 cups)
of plain flour, sifted
Method:

Preheat oven to 150˚C.

Sieve rice flour & plain flour into a bowl.
-
Add the
sugar.
-
Rub in
the butter.
-
Using your hands, mix into a dough.
-
Roll out onto a lightly floured (or sugared)
bench top.
-
Cut into desired shapes.
-
Place onto a baking tray which is lined with
baking paper.
-
Prick all over with a fork & sprinkle with
sugar.
-
Bake for approximately 20 minutes.
