Scalloped Potatoes

Ingredients:

  • 1kg potatoes, peeled & cut into 2mm slices. Desiree, Anja, Bintje or Russet are good varieties for this recipe.

  • 150g leg ham, finely chopped.

  • 300ml cream.

  • 180ml milk.

  • 3/4 cup coarsely grated cheddar cheese.

Method:

  • Preheat oven to 180°C.

  • Grease a casserole dish & place 1/4 of the potatoes in a layer inside the dish.

  • Top with 1/3rd of the ham.

  • Continue layering the potato & ham, finishing with a layer of potato.

  • In a small pan, heat the cream & milk until almost boiling. Pour over potato & ham mixture.

  • Cover with foil & bake for 30 minutes. Remove foil & bake a further 15 minutes. Top with cheese, bake, uncovered around 20 minutes until potato is tender.
