Roasted Pumpkin
Ingredients:

500g pumpkin, seeds removed & cut into
chunks

½ clove of garlic
-
Cooking oil
-
Herbs (optional)
-
Salt & pepper to taste
Method:

Preheat oven to 180˚C.

Put oil in roasting tin & place in oven.

Wash the pumpkin, remove the seeds. You can
peel the skin off if desired or leave on.

Remove the roasting dish from the oven & put
the potatoes in. Ensure they are well coated
with the hot oil.

Break up the garlic into individual cloves.
Place in roasting dish with pumpkin. There
is no need to peel the garlic.

Season with salt, pepper & herbs (optional)

Bake for approximately 45 minutes.
