Roasted Pumpkin

Ingredients:

  • 500g pumpkin, seeds removed & cut into chunks
  • ½ clove of garlic
  • Cooking oil
  • Herbs (optional)
  • Salt & pepper to taste

Method:

  • Preheat oven to 180˚C.
  • Put oil in roasting tin & place in oven.
  • Wash the pumpkin, remove the seeds. You can peel the skin off if desired or leave on.
  • Remove the roasting dish from the oven & put the potatoes in. Ensure they are well coated with the hot oil.
  • Break up the garlic into individual cloves. Place in roasting dish with pumpkin. There is no need to peel the garlic.
  • Season with salt, pepper & herbs (optional)
  • Bake for approximately 45 minutes.
