Roast Leg of lamb

 

how to cook roast lamb

Ingredients:

  • 1 x 2kg leg of lamb
  • 2-4 garlic cloves (according to taste)
  • 1-2 sprigs of fresh rosemary
  • Salt & pepper

Method:

  • Preheat oven to 180˚C.
  • Place the lamb in a baking tray & with a sharp knife, make multiple slits in the lamb. I usually do around 20 to 25 slits.
  • Peel & finely slice the garlic. Place garlic into the slits.
  • Add salt & pepper to the lamb.
  • Add rosemary sprigs to the lamb.
  • Place in oven & cook for approximately 2 hours (allow 30 minutes per 500g).
  • Remove from oven, sit on a plate & cover with foil for 10 minutes.
  • Meanwhile, place the pan onto the stove. Add 1/2 to 1 cup of red wine, a tablespoon of wholegrain mustard & a tablespoon of gravy powder & a water (if necessary). Cook until thickened.
  • Serve with roast potato, roast pumpkin & vegetables.
