Potato Salad

potato salad recipe

Ingredients:

1.5kg potatoes (Coliban, Pontiac, Nicola, Pink Fir Apple)
1 red onion, finely chopped
1 tablespoon wholegrain mustard
1 cup (250ml) good quality mayonnaise*
4 hard boiled eggs (optional)
1/2 cup chopped parsley or 2 tablespoons of finely chopped chives (optional).
Salt & pepper to taste.

Method:

  • Peel potatoes & boil in salted water until just tender. Drain & cool.

  • Combine mayonnaise, onion & mustard in a small bowl & mix well.

  • Add potatoes to a salad dish, carefully stir in the mayonnaise mix.

  • Season to taste.

  • Top with quartered or sliced eggs & parsley or chives (optional).

Notes:

* We use Hellmans or S & W mayonnaise for our potato salad. Both are excellent.

The following ingredients may also be added to a potato salad;

  • Dill

  • Crispy bacon, finely chopped (see here for how to cook bacon)

  • Replace wholegrain mustard with Dijon mustard
