Potato Cakes

 

Ingredients:

  • 500g potatoes, peeled & cubed
  • 50g butter
  • 110g flour (approx)
  • Salt & pepper to taste

Method:

  • Boil the potatoes in lightly salted water until tender. Drain well.
  • Mash the potatoes until smooth, add the butter & season with salt. Mix in well.
  • Add enough flour until the mixture forms a firm dough, knead well to combine.
  • Place the mixture onto a floured surface & using damp hands, shape into cakes approximately 3 inches in diameter by 1 inch thick. Transfer to a plate & refrigerate for 30 minutes to allow the cakes to firm up.
  • Add a small amount of cooking oil to a frying pan over a medium to high heat. Cook until golden brown.

Optional extras:

You may wish to add some further ingredients for a different flavour. These should be added just after the mashing stage. Suggestions include;

  • 1 small grated onion.
  • 1/2 cup parsley.
  • 1/2 cup grated cheddar cheese.
  • Pinch of nutmeg.
  • Pinch of chili.
