Potato bake

Ingredients:

  • 1kg medium sized potatoes (sebago, desiree), peeled & cut into  1cm thick slices
  • 300ml thin cream
  • 3 rashers bacon, finely chopped
  • 2 cloves of garlic, crushed
  • 1 onion, finely chopped
  • 250g cheddar cheese
  • Salt & pepper to taste

Method:

  • Preheat oven to 180˚C.
  • Lightly grease a 2.6 litre capacity baking dish.
  • Sautee the bacon, onion & garlic for 4 to 5 minutes, until cooked.
  • Place a layer of the sliced potatoes on the in the baking dish.
  • Season with salt & pepper.
  • Top with a layer of the bacon, garlic, onion mix.
  • Add a layer of cheese.
  • Repeat the layer with potatoes & bacon mix.
  • Season with salt & pepper.
  • Pour the cream over the mix.
  • Finish with a layer of cheese.
  • Cover in foil & bake for approximately 1 hour, until potatoes are tender.
  • Remove foil & bake a further 15-20 minutes, until the cheese has melted & is golden.
