Peppermint Creams

Ingredients:

  • 450g icing sugar.

  • 1 egg white.

  • Few drops of peppermint essence.

  • Food colouring (optional).

Method:

  • Place egg white in a bowl & beat lightly.

  • Add the lemon juice.

  • Slowly add the icing sugar, mixing until you have a dough consistency.

  • Add peppermint essence & food colouring.

  • Dust a work surface with a little icing sugar & roll out dough.

  • Cut into shapes.

  • Lay out to dry on sheets of baking paper.

Notes:

  • After cutting out, but while the dough is still soft, you can add decorations to the sweets.

  • Once dried, you can dip one half of the sweets in melted chocolate.
