Pancake recipes

Ingredients:

2 cups of self raising flour
1/2 cup of plain flour
2 tablespoons of caster sugar
2 1/3 cups of milk
80g butter, melted & cooled
1 egg, lightly whisked
Butter or oil for cooking

Method:

  • Sift flour into a bowl.

  • Make a well in the centre & pour in slowly add milk, eggs & butter. Mix the mixture until smooth.

  • Over a medium heat, preheat a non stick frying pan & add butter. When melted, add 1/3 cup of pancake mixture & heat until bubbles appear on the surface (usually 1-2 minutes). Turn pancakes over & cook for a further 1-2 minutes.
