Mussels in
White Wine
Ingredients:
1kg mussels, scrubbed and beards removed
(discard any mussels with broken shells)
2-4 cloves of garlic, crushed
4
spring onions, finely sliced
1
red chilli, finely sliced (optional)
3/4 cup of dry white wine
2
tablespoons flat leaf parsley, finely chopped
Salt and pepper to taste
Crusty bread to serve
Method:

Melt butter in
a large saucepan and saute onion, chilli and
garlic until tender.

Add white wine
& bring to boil.

Add mussels,
cover and cook for 3 minutes, shaking the
pan occasionally.

Remove from
heat & transfer mussels to a large bowl.

Serve
immediately with crusty bread.
Note:
Uncooked mussels which are open should be
tapped, discard if they don't close.
Cooked mussels which have not opened should be
discarded.
