Hungarian Goulash

Ingredients:

  • 1kg chuck steak, cut into 1 inch cubes.

  • 2 tablespoons oil.

  • 2 large onions, sliced.

  • 2 cloves garlic, crushed.

  • 1 1/2 tablespoons ground sweet paprika.

  • 1 tablespoon flour.

  • 4 tablespoons tomato paste.

  • 1 cup red wine.

  • 1 1/2 cups beef stock.

Method:

  • Heat oil in a saucepan, add onion & garlic & cook until translucent.

  • Flour the steak & add to the pan in batches. Cook until well browned. Return all meat to the pan.

  • Add paprika.

  • Stir in tomato puree, red wine & stock. Bring the mixture to the boil, continually stirring.

  • Reduce the heat & simmer, covered, for 2 hours or until the meat is tender.

  • Serve on a bed of pasta or rice.
