Grilled Eggplant

 

grilled eggplant

Ingredients:

1 large eggplant.
1/2 cup of olive oil.
1-2 cloves of garlic, peeled & cut in half.
Salt & pepper to taste.

Method:

  • Preheat grill to medium heat.

  • Wash eggplant, cut into 1/4 - 1/2 inch slices, lengthways. Some people prefer to peel their eggplant prior to slicing, this is optional.

  • Place in a colander & sprinkle with salt to remove the bitterness. Leave for 20 minutes. Rinse well & pat dry with paper towels.

  • Rub garlic over both sides of the eggplant slices, brush with olive oil & season well.

  • Grill for approximately 15 minutes, turning once.

Notes:

  • You can also sprinkle your favourite herbs over the eggplant the same time as you season.

  • You can make up a marinade of 1/4 cup olive oil & 1/4 cup balsamic vinegar. Brush on just prior to grilling.

  • Mix together 1/4 cup of breadcrumbs & 1/4 cup grated parmesan cheese. After brushing with olive oil, sprinkle this mix over the eggplant & grill.
