Glazed
Carrots

Ingredients:
6-8 medium
sized carrots, or one bunch of baby carrots,
peeled & quartered lengthways. 4 tablespoons
butter. 4 tablespoons
sugar. 1 tablespoon
of finely chopped thyme or parsley (optional) Pinch of
salt.
Method:

Place carrots
uncovered in a pan with enough water to
cover the carrots. Add a pinch of salt to
the water.

Bring to boil
& simmer for 5 minutes, until carrots are
tender.

Drain the
carrots & keep aside for the time being.

Meanwhile, add
the butter & sugar to the pan over a medium
heat. Once melted, add the carrots & toss
ensuring they are well coated.

Sprinkle with
herbs (optional), serve
immediately.
