Garlic Sauce (toum)

Ingredients:

  • 4 cloves of garlic, minced.

  • 1/4 cup of canola oil, or as needed.
  • 1 lemon, juiced, or as needed.
  • 1/4 teaspoon salt.

Method:

  • Using a pestle & mortar, add the salt & garlic & mince.

  • Place garlic into a blender & gradually add the canola oil & lemon juice until mixture is smooth.

  • Refrigerate for 2 hours prior to use.

Note:

You may not use all of the lemon juice or canola oil. Just keep adding a small amount at a time until you get the consistency of mayonnaise.

If the mixture is too thin, add an egg white.
