Fried eggplant

fried eggplant

Ingredients:

  • 1 large eggplant, sliced into 1cm slices.
  • 3 eggs, lightly whisked.
  • 2 cups of breadcrumbs.
  • Vegetable oil for frying.
  • Salt & pepper to taste, plus extra salt.

Method:

  • Slice the eggplant & sprinkle both sides with salt. Leave to stand for 30 minutes.
  • Rinse well.
  • Dip each eggplant slice in egg & then coat with breadcrumbs.
  • Add oil to a frying pan & heat to medium/hot. Add eggplants & fry for 2-3 minutes on each side until golden.
  • Season with salt & pepper.
