Fried eggplant

Ingredients:
-
1 large eggplant, sliced into 1cm slices.

3 eggs, lightly whisked.

2 cups of breadcrumbs.

Vegetable oil for frying.

Salt & pepper to taste, plus extra salt.
Method:

Slice the eggplant & sprinkle both sides
with salt. Leave to stand for 30 minutes.

Rinse well.
-
Dip each eggplant slice in egg & then coat
with breadcrumbs.
-
Add oil to a frying pan & heat to
medium/hot. Add eggplants & fry for 2-3
minutes on each side until golden.
-
Season with salt & pepper.
