Creamy Potato Soup
Ingredients:
1kg diced potatoes,
peeled & chopped 2 onions, chopped 1.6 litres of
chicken or vegetable stock 300ml cream 2 cloves of
garlic, chopped 50g butter 1 bay leaf Salt
& pepper
Method:

Melt butter in
a saucepan & add onions & garlic. Sauté
until onions are yellow & soft.

Add the
potatoes & continue sautéing for a further
5-10 minutes. Season with salt & pepper.

Add the stock
& bay leaf.

Cover the pan
& simmer for 20 minutes, until the potatoes
are tender.

Blend the
mixture in batches until smooth.

Return to pan
& add the cream. Simmer until heated
through.

Serve with
crusty bread.
