Creamy Garlic Prawns

Ingredients:

  • 30g butter or oil

  • 6-8 cloves of garlic finely chopped

  • 250ml thickened cream

  • 1kg large green king prawns (peeled & deveined, leaving tails intact)

  • 2 tablespoons white wine

  • 1 tablespoon lemon juice

  • 2 tablespoon of fresh parsley

  • 1 teaspoon of crushed pepper

  • 1/2 teaspoon salt

Method:

  • Combine, lemon juice, wine, salt & pepper in a bowl.

  • Heat butter or oil in a heavy frying pan & add prawns & lemon juice mixture. Cook until they are just pink.

  • Reduce heat & add cream.

  • Garnish with parsley.

  • Serve on a bed of rice & crusty bread.

You may also wish to marinade the prawns prior to cooking. To do this, place prawns, lemon, wine, garlic, salt & pepper in a bowl, cover & refrigerate for 1 hour. Heat oil & add prawn/marinade mixture & cook until prawns turn pink. Add cream & stir through for 30 seconds.
