Corned Beef
Ingredients:
1.5kg (3.3lbs)
beef corned silverside
2 bay leaves
6 black
peppercorns
1 large brown
onion (roughly sliced)
1-2 carrots
2 tablespoons malt
vinegar
Method:

Place beef,
bay leaves, peppercorns, onion, carrot,
parsnip & vinegar in a large pan. Add enough
cold water to just cover the beef.

Bring to the boil, reduce heat and simmer,
covered for approximately 2 hours, or until the
beef is tender.

Remove
beef from pan. Corned beef can be served either hot
with parsley sauce, béchamel sauce or
white sauce and vegetables or cold in
sandwiches.
