Chocolate
Mousse

Ingredients:

200g dark
chocolate, chopped into pieces (plus a
little extra for decorating)

300ml
thickened cream

3 eggs,
separated

2 tablespoons
caster sugar
Method:

Place
chocolate and half the cream in a heatproof
bowl & place over a saucepan of simmering
water (don't let the bottom of the bowl
touch the water). Cook over a low heat until
the chocolate is melted, stirring
continually. Set aside & cool for 5 minutes.

Add the egg
yolks.

Beat the egg
whites until soft peaks form. Add the sugar
& beat until dissolved.

Gently fold
the egg white/sugar mixture into the cooled
chocolate mixture.

Spoon the
mixture into serving glasses & refrigerate
at least 3 hours.
-
Whip the
remaining cream & dollop on top of mousse.
Sprinkle with chocolate shavings.
