Chili Con Carne

Ingredients:
- 500g beef
mince (you can also use 400g beef such as
chuck or round steak, finely cubed).
- 1
tablespoon oil.
- 1 onion,
finely chopped.
- 2 cloves
of garlic, crushed.
- 2 fresh
long red chilies, chopped finely.
- 1 x 400g
tin crushed tomatoes.
- 1 x 400g
tin red kidney beans, rinsed & drained.
- 1/2
teaspoon oregano.
- 1/2
teaspoon cumin seeds.
- 1 cup of
water or beef stock.
- Salt &
pepper to taste.
Method:

Heat oil in a large pan, add
onion, garlic & chili, stirring until onion
is soft & translucent.

Add mince, cook until
browned lightly.

Add undrained tomatoes,
oregano, cumin, kidney beans & season.

Add beef stock or water,
bring to the boil.

Reduce heat & simmer for 30
minutes or until most of the liquid has
evaporated.
Notes:
This is one of those recipes
that can be modified to suit individual tastes.
Authentic chili con carne doesn't contain tinned
tomatoes or kidney beans. You can add more or
less chili according to taste.
This can be prepared a day ahead
if properly refrigerated. In fact this is one
such recipe that tastes better the next day.
