Buttermilk
Pancakes
Ingredients:

2 cups of
plain flour
-
2 teaspoons
of baking powder
-
1 teaspoon of
bicarbonate of soda

2 eggs,
lightly whisked
-
2 cups of
buttermilk
-
1 teaspoon
vanilla essence
-
2 tablespoons
sugar
-
Pinch of salt
Method:
-
Sift
all dry ingredients into a bowl.

Make a
well in the centre & pour in slowly add
vanilla essence, buttermilk & eggs. Mix the mixture until smooth.

Over a
medium heat, preheat a non stick
frying pan & add butter. When melted,
add 1/3 cup of pancake mixture & heat until
bubbles appear on the surface (usually 1-2
minutes). Turn pancakes over & cook for a
further 1-2 minutes.
