Bruschetta Recipes

Basic bruschetta:

Ingredients:

1 loaf of crusty bread such as Italian wood fired bread or French loaf
4 ripe tomatoes, seeded & chopped
1-2 cloves of garlic, crushed
Plus 1-2 cloves of garlic peeled & sliced in half (to rub on bread)
1/4 cup of fresh basil, finely chopped
6 tablespoons of extra virgin olive oil
Salt & pepper to taste.

Method:

  • Combine tomatoes, garlic & basil in a bowl, season well. Cover & refrigerate for 1 hour.

  • Slice bread & lightly grill on both sides until it's golden brown.

  • While the bread is still warm, rub one side of the bread with the sliced garlic.

  • Drizzle each slice of bread with 1 tablespoon of olive oil.

  • Spoon tomato mixture onto bread & serve.

Parmesan bruschetta:

Ingredients:

1 loaf of crusty bread such as Italian wood fired bread or French loaf
4 ripe tomatoes, seeded & chopped
1-2 cloves of garlic, crushed
Plus 1-2 cloves of garlic peeled & sliced in half (to rub on bread)
1/4 cup of fresh basil, finely chopped
1/4 cup of freshly grated parmesan cheese
6 tablespoons of extra virgin olive oil
Salt & pepper to taste

Method:

  • Combine tomatoes, garlic & basil in a bowl, season well. Cover & refrigerate for 1 hour.

  • Slice bread & lightly grill on both sides until it's golden brown.

  • While the bread is still warm, rub one side of the bread with the sliced garlic.

  • Drizzle each slice of bread with 1 tablespoon of olive oil.

  • Spoon tomato mixture onto bread.

  • Sprinkle with grated parmesan & serve.

Note: Once the bread has had the topping added, you may wish to place under the grill for a further 2-3 minutes to melt the parmesan.

Feta bruschetta:

Ingredients:

1 loaf of crusty bread such as Italian wood fired bread or French loaf
4 ripe tomatoes, seeded & chopped
1-2 cloves of garlic, crushed
Plus 1-2 cloves of garlic peeled & sliced in half (to rub on bread)
1/4 cup of fresh basil, finely chopped
250g crumbed feta cheese
6 tablespoons of extra virgin olive oil
Salt & pepper to taste

Method:

  • Combine tomatoes, garlic & basil in a bowl, season well. Cover & refrigerate for 1 hour.

  • Slice bread & lightly grill on both sides until it's golden brown.

  • While the bread is still warm, rub one side of the bread with the sliced garlic.

  • Drizzle each slice of bread with 1 tablespoon of olive oil.

  • Spoon tomato mixture onto bread.

  • Add crumbled feta cheese.

  • Place under the grill for approximately 5 minutes until the cheese has melted.
