Broccoli

Preparing
broccoli:
When selecting
broccoli, look for firm, tight, green florets.
Avoid soft/floppy broccoli or florets with a
yellow tinge.
Preparation of
broccoli is fairly simple;

Wash
thoroughly under cold water.

Place broccoli
on a clean chopping board & using a sharp
knife, cut it into manageable sized florets.
Leaving 1-2cm of stalk.
Ingredients:
500g
broccoli, cut into florets (see above).
1/4 cup
of olive oil.
Half a head of garlic (unpeeled).
Salt &
pepper to taste.
Method:
-
Preheat oven to 200C.
-
Place
broccoli & garlic cloves in a mixing bowl,
add the oil & mix well.

Transfer
to a baking dish & place in the oven. Roast
for 25 to 30 minutes, until tender &
slightly browned on the edges.
Optional extras:
-
A
sprinkling of pine nuts added 10 minutes
prior to finishing.
-
A squirt
or two of lemon juice.
-
A
sprinkling of grated parmesan cheese.
