Broccoli cheese

Ingredients:

  • 500g broccoli.
  • Salt (to taste).

Cheese sauce:

  • 2 tablespoons butter.
  • 2 tablespoons flour.
  • 1 cup (250ml) milk.
  • 1 cup grated cheddar cheese, plus ¼ cup extra (for serving).
  • Salt & pepper to taste.

Method:

  • Wash broccoli & cut into bite sized florets.
  • Bring a pan of salted water to the boil. There should be enough water to just cover the broccoli.
  • Carefully add the broccoli florets (being careful not to splash yourself with hot water).
  • Simmer until the broccoli is a bright green colour (usually around 5 minutes), and it is tender. Test with a knife.
  • Once cooked, drain into a serving bowl & pour over cheese sauce (see below for cheese sauce instructions).
  • Top with ¼ cup of grated cheese & serve immediately.

Cheese sauce:

  • While the broccoli is cooking, melt the butter in a saucepan over a medium heat.
  • Add the flour. Cook for 1-2 minutes, stirring continuously.
  • Slowly add the milk, continually stirring until sauce boils & thickens.
  • Add cheese & again bring to the boil.
  • Season with salt & pepper.
