Broccoli cheese
Ingredients:

500g broccoli.
-
Salt (to taste).
Cheese sauce:

2 tablespoons butter.

2 tablespoons flour.
-
1 cup (250ml) milk.

1 cup grated cheddar cheese, plus ¼ cup
extra (for serving).

Salt & pepper to taste.
Method:

Wash broccoli & cut into bite sized florets.
-
Bring a pan of salted water to the boil.
There should be enough water to just cover
the broccoli.

Carefully add the broccoli florets (being
careful not to splash yourself with hot
water).

Simmer until the broccoli is a bright green
colour (usually around 5 minutes), and it is
tender. Test with a knife.

Once cooked, drain into a serving bowl &
pour over cheese sauce (see below for cheese
sauce instructions).

Top with ¼ cup of grated cheese & serve
immediately.
Cheese sauce:
-
While the broccoli is cooking, melt the
butter in a saucepan over a medium heat.

Add the flour. Cook for 1-2 minutes,
stirring continuously.

Slowly add the milk, continually stirring
until sauce boils & thickens.

Add cheese & again bring to the boil.

Season with salt & pepper.
