Bread Sauce
Ingredients:

1 small onion,
peeled & quartered

6-10 whole
cloves (depending on taste)

2 cups of milk
-
2 1/2 cups of
fresh white breadcrumbs
-
50g butter
-
6 whole
peppercorns
-
1/4 teaspoon
nutmeg
-
2 tablespoons
of thick cream
-
1 bay leaf
-
Salt & pepper
Method:
-
Press the
cloves into the onion
-
Add the
milk to a pan, add the onion, peppercorns,
bay leaf & a pinch of salt. Bring to the
boil.

Remove
from heat, cover & set aside in a warm spot
for 1 hour to let the flavours infuse.

Remove
the onion, bay leaf & peppercorns.

Place pan
back on the heat (low setting). Add
breadcrumbs to the saucepan, mixing well
until the sauce thickens.

Stir in
butter, thick cream & nutmeg.
-
Add salt
& pepper to taste.
