Baked Sweet Potato

Ingredients:

  • 4 medium sized sweet potatoes. *

  • Olive oil.

  • Pinch of your favourite herbs or spices (optional)

  • Sea salt.

Method:

  • Preheat oven to 220C.

  • Gently scrub sweet potatoes to remove the dirt.

  • Prick several times with a fork to allow steam to escape during cooking.

  • Lightly coat sweet potato with olive oil.

  • Sprinkle with sea salt.

  • Bake for approximately 45-60 minutes, until skin is crispy & sweet potato is tender when pierced with a fork.

  • Using a fork, cut a dotted line across the top of the cooked sweet potato & gently open.

  • Be careful not to burn yourself when opening up the cooked sweet potato.

  • Season to taste and top with butter.

Notes:

* Larger sweet potatoes will need to be chopped into smaller pieces before cooking.

Add a sprinkling of your favourite herbs (such as rosemary or oregano) or spices, prior to placing the sweet potatoes in the oven.

Add a few unpeeled cloves of garlic to the pan prior to roasting.
