Baked Sweet Potato

Ingredients:
Method:

Preheat oven to
220C.
-
Gently scrub
sweet potatoes to remove the dirt.

Prick several
times with a fork to allow steam to escape
during cooking.

Lightly coat
sweet potato with olive oil.
-
Sprinkle with sea
salt.
-
Bake for
approximately 45-60 minutes, until skin is crispy &
sweet potato is tender when pierced with a
fork.

Using a fork, cut
a dotted line across the top of the cooked
sweet potato & gently open.
-
Be careful not to
burn yourself when opening up the cooked sweet potato.
-
Season to
taste and top with butter.
Notes:
* Larger sweet
potatoes will need to be chopped into smaller
pieces before cooking.
Add a sprinkling
of your favourite herbs (such as rosemary or
oregano) or spices, prior to placing the sweet
potatoes in the oven.
Add a few unpeeled
cloves of garlic to the pan prior to roasting.
