Baked Potato
Skins
Ingredients:
5
medium (1kg) old potatoes
2
tablespoons cooking oil
1
tablespoon chopped rosemary
2
teaspoons fine sea salt
1
teaspoon pepper
300ml sour cream
Method:

Preheat oven
to 220C.

Scrub potatoes
well & brush with half the oil.

Place on a
baking tray & bake for 50-60 minutes or
until tender, set aside to cool.

Cut each
potato into 5 or 6 wedges and scoop out the
flesh, leaving the skins intact.

Place potato
skins in a single layer on a wire rack over
an oven tray, skin side up. Brush with
remaining oil. Sprinkle with rosemary, salt
& pepper.

Bake in hot
oven for a further 20-30 minutes until skins
are crisp.

Serve with
sour cream.
