Baked Ham

Ingredients:

1 x 3-4kg cooked leg ham with the bone in.

1/2 cup orange marmalade.

2 tablespoons dijon mustard.

Whole cloves.

Method:

  • Preheat oven to 200C.

  • Place ham into a large baking dish.

  • Cut through the rind about 10cm from the shank end of the leg. Run thumb around edge of ride, just underneath the skin to remove, leave a 1/4 inch layer of fat on the ham.

  • Score the top and sides of the ham, creating a diamond pattern.

  • Combine the glaze ingredients into a bowl & brush the ham with approximately half the glaze.

  • Place a clove in the centre of each diamond until the entire ham is studded with cloves.

  • Place ham in the oven on the bottom shelf. Bake for approximately 60 minutes basting occasionally until the remainder of the glaze is used up.

  • Serve either hot or cold.
