ANZAC biscuits

Ingredients:

  • 1 cup plain flour, sifted
  • 1 cup rolled oats
  • 1 cup caster sugar (brown sugar can also be used)
  • 1/2 cup desiccated coconut
  • 125g caster sugar
  • 2 tbsp golden syrup
  • 1/2 teaspoon bicarbonate of soda
  • 1 tablespoon boiling water

Method:

  • Preheat oven to 160°C.

  • Sift the flour into a large bowl, add rolled oats, coconut & sugar & mix to combine.

  • In a small pan over a low heat, melt the butter & golden syrup together.

  • Mix the bicarbonate of soda with a tablespoon of boiling water, add to the melted butter/syrup, add to the dry ingredients & mix well.

  • Line a baking tray with baking paper. Place one tablespoon (around the size of a walnut) of the mixture onto the tray, allow enough space to allow for the mixture to spread while cooking.

  • Bake for 10 - 15 minutes, until golden.

  • Place on a wire rack to cool.
