Tzatziki

Ingredients:

  • 500g Greek yoghurt.

  • 1 medium cucumber.

  • 2 tablespoons lemon juice.

  • 1 clove garlic, crushed.

  • 2 tablespoons chopped mint.

  • Salt & pepper to taste

Method:

  • Peel the cucumber & scoop out the seeds. Finely chop or grate. Squeeze out as much of the moisture as possible.

  • Add cucumber, Greek yoghurt, lemon juice, garlic, mint, salt & pepper to a bowl & mix.

  • Store in refrigerator for 1-2 hours to allow the flavours to combine.
