Pumpkin Soup

Ingredients:
1 kg pumpkin. 60g butter. 1 onion, finely
chopped. 4 cups of chicken
stock. 3/4 cup of sour cream.
Salt & pepper to
taste.
Method:
-
Peel & chop
the pumpkin into medium sized pieces.

Heat butter in
a medium pan, add onion & cook gently for 5
minutes until onion is translucent.

Add pumpkin &
stock. Simmer, covered for 20 minutes or
until pumpkin is tender. Remove from heat &
cool.

Process the
mixture in a food processor in batches until
smooth.
-
Return soup to
pan & heat, season to taste.
-
Top with sour
cream & serve with crusty bread.
