Mayonnaise

Ingredients:

  • 2 egg yolks (at room temperature).
  • 1 teaspoon Dijon mustard.
  • 300ml light olive oil.
  • 1 teaspoon white vinegar.
  • 1 teaspoon fresh lemon juice.

Method:

  • Place eggs, mustard, lemon juice & vinegar in a food processor, combine mixture until it begins to thicken. *

  • Gradually add the olive oil in a slow stream continuing to mix all the time. The mixture is ready when has thickened.

  • Season with salt & pepper to taste.

* If you don't have a food processor you can hand whisk the ingredients.
