Chapatis

Ingredients:

  • 3 cups (600g) white plain flour.

  • 1 cup (160g) wholemeal plain flour.

  • 125g butter.

  • 2 teaspoons caraway seeds.

  • 1 1/3 cups (330ml) hot water.

  • 50g ghee.

Method:

  • Combine flours in a large bowl, rub in butter, stir in seeds.

  • Gradually add water, mix into a soft dough. Knead dough on unfloured surface until smooth & elastic.

  • Cut dough in half, then cut each half into 9 even portions. Knead each portion well. Roll each portion of dough into a long thin sausage, roll up into a coil, flatten with hand. Roll coil into a 15cm round.

  • Heat a pan over a medium heat, lightly grease with ghee. Cook chapatis 1 at a time. When golden brown, turn & cook other side until golden brown.
