Chapatis
Ingredients:

3 cups (600g)
white plain flour.

1 cup (160g)
wholemeal plain flour.

125g butter.

2 teaspoons
caraway seeds.

1 1/3 cups
(330ml) hot water.

50g ghee.
Method:
-
Combine
flours in a large bowl, rub in butter, stir
in seeds.

Gradually add
water, mix into a soft dough. Knead dough on
unfloured surface until smooth & elastic.

Cut dough in
half, then cut each half into 9 even
portions. Knead each portion well. Roll each
portion of dough into a long thin sausage,
roll up into a coil, flatten with hand. Roll
coil into a 15cm round.

Heat a pan
over a medium heat, lightly grease with
ghee. Cook chapatis 1 at a time. When golden
brown, turn & cook other side until golden
brown.
